Our Verdict
Last year they offered 20%, so this 15% is a bit disappointing. Not really any reselling play here either. I think in previous years it code as “Category: Merchandise NOVELTY / SOUVENIR SHOPS” so no opportunity to use up airline credits either. But I’d be happily proven wrong on that.

I'll share me story. tl;dr: saved 20% at Fairmont and got a free night at Hilton.
Long version: Last year Hilton / Amex had a CC spend offer (targeted) to spend $1000 on my Amex Hilton card and get a free night cert. Fairmont BF deal last year was to purchase a Fairmont GC and receive an additional Fairmont GC with 20% value of the original. So I purchased a $1000 GC and ended up with $1000 + $200 + Hilton free night cert.
Fun part = redemption: Bali, Indonesia - Fairmont Sanur Beach. Used Alaska miles to fly 2 adults and 1 teenager in business on Cathay. Alaska allows stopover and we stayed 3 days in HKG on the return and went to Disneyland Hong Kong. Side note Disneyland HK is NOT very expensive compared to Disney in the US. Example: 1 day park tickets (walk-up) were $78 USD vs. $119 in CA. CX in J SFO - HKG -SFO was great! CX from HKG - DPS was good too, only a 5hr flight, you get intra-Asia style seats.
Fairmont Sanur Beach Bali is a very special place. Rooms are 90 sq meters = HUGE. We stayed 7 nights. Purchased 2 nights (used Room Upgrade Cert as well) and got a free 3rd night (Fairmont Promo), used 4 free nights Chase Fairmont (2 wife and 2 husband). Staff was confused trying to assign our room for the wrong #nights. The manager eventually understood the booking and gave us a nice upgrade for the first 3 nights and asked us to pay $150/night for the same upgrade across the 4 free nights. Super nice upgraded room for all 7 nights. We agreed. (traveling for 20 hours reduced my negotiating skills.) They also charged 70/night for the rollaway for our son. The resort is incredible and since we had $1200 in spend, it covered all charges and most of our food. We ate like king's since Bail is very inexpensive. At the beachside warung 1 appetizer, 2 entrees, dessert and 4 beers was a total of $27 USD.
We saved about $225 using the Hilton free night cert in Sonoma Wine Country.
Fairmont has the kind of quality and service I look for and I hope to vacation with them again.
