I think the answer is yes. Of course that will be the time I actually need to put in a claim. As a data point, I also got “one or more purchases” language on my AMEX offer.

Was just about to say this. FYI you have to change in person, so it works best if you change when returning your car. However, you could return up to (iirc) a couple weeks after and change the payment just to be cautious in case they say there was damage they found after the fact

You can change on the app. I just did it.
I did a split payment. $1 on the original csr, bal to Amex.

You’re not covered per the terms:

Initiate and pay for the entire rental transaction using the covered Chase card and decline the rental company’s collision damage waiver or loss damage waiver.

Amex will clawback the credit. It’s a statement credit back, not off when you rent the car.

You book with your chase and then change to the Amex when you return it.

you’ve already returned the car. Presuming you didn’t wreck the car, it does not matter if you negate the insurance.

I have the same dilemma. As a data point, about 1 year ago, Budget said that I dinged the rental and provided pictures (Probably my fault for not inspecting the car closely upon pickup – not caused by my driving). Sent the bill to Visa Infinite insurance. They took care of the claim 100%.
